Loaded Crash Hot Potatoes

I saw Pioneer Woman's Crash Hot Potatoes on her TV show one day. I made them when some friends came over for supper, and they were in love with them... but I thought they could use a little more spunk.  So this time I made them, I kicked them up a notch. Loading them up = pure yumminess!

Grocery List:

  • New potatoes 
  • Butter
  • Sour cream
  • Ranch dressing
  • Bacon
  • Cheese
  • Green onion
  • Salt and pepper
  • EVOO
This is one of "those" recipes that you can not really screw up. There are no exact measurements; it is strictly dependent on your own taste.  If you are one who has to follow a recipe, I am sorry... but seriously just start dumping, YOU CAN NOT GO WRONG!

First, start off by boiling a large pot of water.  Set your oven to 450 degrees.


Next, wash and scrub your new potatoes, but leave the skin ON. 


Add them to the boiling water.  Let them boil for about 20 minutes, or until you can stick a fork in them and they are soft.


Remove from stove, drain and rinse.


Pour about a tbsp of EVOO onto a cookie sheet and spread it around. 
Place your potatoes on the cookie sheet and "smash" them with a potato masher or spatula.
(If they don't smash easily, they need to be boiled longer)


You can put them as close together, or as far apart as you like.  If you are serving guests, they look pretty piled closely to one another.

Gather your bacon, cheese, sour cream, ranch dressing, and green onion. Don't forget the salt and pepper!


Next, melt a few tbsp of butter (this is dependent on how many potatoes you are making).... poor that on top of your potatoes.  Then mix together equal parts ranch dressing to sour cream.  Add on top of each potato, then cover with cheese.


Add your bacon, green onion, salt and pepper.


Place in the 450 degree oven for 15 minutes, or until golden brown... I wish I could somehow attach the smell to my blog.... the smell alone is AMAZING.


ENJOY!


Helpful hint: Cool completely before refrigerating the left overs.  The moisture from the heat can become trapped in your container and cause them to become really soggy if not.... Otherwise, they reheat really well.
